I have been making this spinach and feta pie for as long as I can remember. I was originally inspired by a Greek recipe, which I can never remember, therefore keep inventing something new every time. This time, I decided to write it down with two gluten free dough options – with store bought puff pastry dough and a lovely short crust pastry dough, which I have taken from another gluten free blogger’s blog and will post and link to here later. I can assure you, it is amazing.

Spinach and feta pie – store bought dough

280 g Chilled Gluten Free Puff Pastry Sheet by Jus-Rol (I normally get it form a bigger size Sainsbury’s)
85 g frozen spinach, thawed and drained
2 garlic cloves, finely sliced
0.5 medium size onion, chopped
2 medium sized eggs (one for filling, one for brushing over the pie)
200 g feta cheese
ground black pepper
ground nutmeg
Directions
- Pre-heat the oven to 200C/180C fan/gas 6.
- As per the package, un-wrap and un-roll the dough before you start mixing the filling ingredients for it to reach room temperature before cooking
- Mix together in a bowl the spinach, garlic, onion, egg, feta and seasoning.
- Cut the dough to fit into a medium size pan covered with baking paper. And lift the dough into the pan.
- Pour in the filling and lift up the edges if possible. Cover with pieces of the leftover dough and brush over with the whisked egg.
- Cook in the oven for 20-30 minutes until it becomes nice and golden brown.
