Rich gluten-free oat biscuits

These rich and amazing gluten-free oat biscuits are an adaptation of my mom’s favourite oat biscuits that she used to make all the time when me and my sister were kids. Now that my mom has passed away, they help me keep her memory alive. Just in case you didn’t know, oats are naturally gluten free, but if you are very sensitive to gluten, use the more expensive gluten free ones. I order them usually from Healthy Supplies as they are great value and the perfect size for my healthy granola & morning porridge too.

After blending the ingredients together, the dough should be looking quite stiff such as this:

These easy gluten-free oat biscuits are rich and amazing, everyone’s favourite, low in calories too. They stay fresh for quite a few days.

Ingredients

  • 2 medium eggs

  • 100 g brown sugar

  • 70 g liquid coconut oil

  • 30 g liquid peanut butter

  • 220 g gluten-free oats

  • 30 g almond flour

  • 20 g gluten-free plain white flour

Directions

  • Pre-heat the oven to 160/140 fan/gas 3.
  • Whisk the eggs with sugar in a bowl, add coconut oil and peanut butter. Mix well.
  • Mix the flours and oats in a separate bowl and to the liquid ingredients.
  • Mix the dough and place approximately 30 teaspoon size portions of the dough on a baking tray lined with baking paper.
  • Bake in the oven for approximately 15 minutes or until golden brown.
  • Cool before eating.
