Not only gluten free but also low in sugar and vegan, these energy balls are perfect as a post workout snack. They are super easy to make. You just need to mix all the ingredients together really well, either by hand or with an electronic mixer and you’re ready to roll…the balls.

I find the addition of almond butter makes them smoother and more enjoyable but you can always substitute with peanut butter and also add some small seeds for example sesame or chia seeds.

Ingredients

  • 5 tbsp ground golden flaxseeds

  • 1 tbsp cocoa powder

  • 2 dates, chopped

  • 2 tbsp smooth peanut butter

  • 1 tbsp almond butter

  • 2 tbsp coconut flakes

Directions

  • Add all ingredients, except the coconut flakes into a mixing bowl and mix well.
  • Add the coconut flakes (desiccated coconut) to the bottom of a round dish.
  • Roll round bite-size balls in your hands and then roll them in the coconut flakes one by one.
  • Ready to serve.
