Easy almond biscuits

These easy to make gluten free almond biscuits with pecan nuts on top include tapioca flour which is is a gluten and grain free starch made from cassava roots or plants. According to research, tapioca flour is easy to digest, benefitting those with digestive issues. It’s also low in calories, sugar and fat. In baked goods, it helps to keep them moist. So why not make these gluten free biscuits as they don’t dry out too quickly.

These easy to make almond biscuits with pecan nuts are not only gluten free but also benefit from tapioca flour’s valuable features such as being easy to digest, low in calories, sugar and fat. Tapioca flour helps to keep them moist for longer too.

Ingredients

  • 2 medium eggs

  • 100 ml milk

  • 20 ml olive oil

  • 4 tbsp brown sugar

  • 1,5 tsp cinnamon

  • 165g ground almonds

  • 200 g gluten free self-raising flour

  • 100 g tapioca flour (you can get it from Healthy Supplies)

  • Pecan nuts for topping the biscuits

Directions

  • Pre-heat the oven to 180/160 fan/gas 4.
  • Whisk the eggs with sugar, add milk and oil.
  • Mix the ground almonds, flours and cinnamon in a separate bowl and add the liquid ingredients to the dry ones. Mix well.
  • Place tablespoon size portions of the dough on a tray lined with baking paper. Place a pecan nut in the centre of each dough ball.
  • Bake in the oven for approximately 15 minutes or until golden brown.
  • Cool before eating.
