Cold kefir soup

On a boiling hot summer’s day, there’s nothing else anyone dislikes more than standing next to a hot stove or oven. So here’s a healthy cold kefir soup for days exactly like that (to make it into a minimal-cook version, you can leave the potatoes out but you’ll still need to boil the eggs). It tastes amazing the next day but it is a bit unusual if you’re not familiar with kefir. Kefir is sooooooo goooood for you, containing protein, Calcium, Magnesium and Vitamin D to name a few. It is naturally gluten free and you can always leave the meat out to make it vegetarian.

Ingredients

  • 250 ml plain kefir

  • 100 ml carbonated mineral water

  • 2 medium potatoes, boiled skin on and diced

  • 2 hard boiled medium eggs

  • 4 radishes, washed and diced

  • 50g cucumber, peeled and diced

  • 1-2 medium size tomatoes, quartered

  • 12 green pitted olives, sliced

  • bunch of green onions

  • fresh or dried dill

  • fine sea salt

  • ground black pepper

  • Optional
  • handful of cubed smoked ham

  • 2 pickled gherkins, diced

Directions

  • Mix the kefir and mineral water in a bowl, add dill, salt and pepper.
  • Add all other vegetables to the wet ingredients, mix well and leave it to sit covered in the fridge for a 1-2 hours.
  • Cut the hard boiled egg into quarters and serve on top of the soup in a bowl. Enjoy!
